Ingredients
These cheesy carrot fritters are perfect for fussy toddlers like mine. Sometimes I find that changing the way I present the food to my kids encourages them to try it, Which is exactly what I did with this recipe. My toddler was adamant he didn't like carrots but as it turns out if you make it into a patty & add some cheese he loves it!
HOW TO MAKE THEM
Step One - Steam or boil your carrots until soft.
Step Two- Mash your carrots to your desired texture. ( we leave them a little lumpy!)
Step three - add in your Egg, Cheese & seasonings and mix.
Step Four - Add a tablespoon of butter or oil to a frying pan.
Step Five - Take about a tablespoon of the mixture and add to the pan. Press flat with the back of a spoon.
Step Six - Cook for 2-3 minutes on each side until golden.
STORAGE INSTRUCTIONS
Fridge - Store in an air tight container inside the fridge for up to 3 days.
Freezer - Store in a freezer safe bag inside of the freezer for up to 3 months
