Cajun Chicken Salad

Ingredients


  • 1 Chicken Breast
  • New Potatoes
  • Lettuce
  • baby Spinach
  • Tomatoes
  • Gated carrot
  • Red Onion
  • 1 tsp Paprika
  • 1/2 tsp garlic powder
  • 1/2 Cayenne pepper
  • 1 tsp onion powder
  • 1/2 tsp Oregano



HOW TO MAKE THEM


Step One - Mix All seasonings in a bowl.


Step Two- drizzle a small amount of oil over your chicken breast then sprinkle over the seasoning mix, Roast in an oven or air fryer for 20 minutes.


Step three - While your chicken is cooking add your potatoes to a pan of boiling water & cook until soft, and chop your salad.


Step Four - once the potatoes are soft remove from the pan & add to a bowl. Add a tablespoon of butter and leave to sit.


Step Five - Remove the chicken from the oven & chop or shred into bite sized pieces.


Step Six - Mix all together and drizzle over your favourite salad dressing!



TIP


To make My favourite salad dressing I mix -

-

  • 1 tsp Dijon mustard
  • 1 tbsp white vinegar
  • 2 tbsp olive oil
  • 1 tsp mayo
  • A pinch of sugar



STORAGE INSTRUCTIONS


Fridge - This is great recipe if you are meal prepping lunches! Just store in the fridge in an air tight container for up to 3 days. (Don't add the dressing until just before you plan to consume)
